Provides the perfect balance of ‘good’ carbs (veggies), protein, and healthy fat, so you feel both satisfied and energized after eating it. It also delivers a broad spectrum of nutrients, and it’s loaded with flavor and superfoods for antioxidants like blueberries.

Ingredients

  • 50g corn bits
  • 150g mixed salad vegetables
  • 50g sliced mushrooms
  • 1/2 avocado
  • 5x grape Tomatoes, cut in fours
  • 1/2 bell peppers, yellow
  • 50g blueberries
  • 2 hard boiled eggs, sliced
  • balsamic vinegar as dressing

Instructions

  1. Stir-fry mushroom and pepper in a non-stick pan on medium heat
  2. Add mix and rest of ingredients in a salad bowl and serve
  3. [Optional] Add various fruits of your choice like strawberries, mandarin oranges, and other healthy nuts like almond or pine nuts. Feta cheese can adds character (and calcium) to the salad.
