Ingredients
- 50g corn bits
- 150g mixed salad vegetables
- 50g sliced mushrooms
- 1/2 avocado
- 5x grape Tomatoes, cut in fours
- 1/2 bell peppers, yellow
- 50g blueberries
- 2
hard boiled eggs, sliced - balsamic vinegar as dressing
Instructions
- Stir-fry mushroom and pepper in a non-stick pan on medium heat
- Add mix and rest of ingredients in a salad bowl and serve
- [Optional] Add various fruits of your choice like strawberries, mandarin oranges, and other healthy nuts like almond or pine nuts. Feta cheese can adds character (and calcium) to the salad.
